entry-content>p>Milk Street Magazine discovered this sweet and savory bruschetta at Silene Piccolo Ristorante in the central Italian town of Foligno. Fresh figs are roasted with rosemary and garlic, and layered with prosciutto and arugula on toasts rubbed with garlic. Fresh figs can be hard to find, and I used the suggested substitute of a ripe but firm Bosc pear. I made the toasts and roasted the pear ahead of time, and put it together before taking it to a neighbor for happy hour. Generously brush both sides of each bread slice with oil and place in a single layer on a broiler-safe rimmed baking sheet. Broil until golden brown on both sides, 2 to 3 minutes, flipping slices about halfway through and rotating the baking sheet as needed for even toasting. Remove from the oven and lightly rub the garlic clove all over one side of each toast. Cut each toast in half crosswise and transfer to a platter; set aside. Reserve the baking sheet for the figs./p>p>In a medium bowl, whisk together the honey, oil, and 1/2 tsp. each salt and pepper. Add the figs and rosemary, then gently toss until evenly coated. Place the figs cut sides up on the reserved baking sheet, gathering them in the center (if using a pear, there’s no need to position the slices in a certain way, but do gather them in the center.) Tuck the rosemary into the figs, then drizzle with the honey mixture remaining in the bowl. Wipe out and reserve the bowl. Broil until softened and lightly caramelized, 3 to 5 minutes. Meanwhile, in the reserved bowl, combine the arugula and lemon juice; toss and set aside./p>p>Drape a few pieces of prosciutto over each toast, dividing them evenly. Place figs on top of the prosciutto, dividing them evenly, discard the rosemary. Drizzle each bruschetta with any juices on the baking sheet. Top with the arugula and sprinkle with the lemon zest and sea salt (if using). A 5 minute prep, which you can do an hour ahead or overnight. Then pop your baking dish into a hot oven and about 15-20 minutes later you’ve got tender, flavorful pork chops. The oven is the perfect temperature to roast some vegetables at the same time; just start them about 10 minutes ahead of the chops. This recipe was created by Joanna Cismaru of Jo Cooks website. My only caution is that she suggests cooking the pork chops 20 to 30 minutes which I think is way too long. A lot will depend on how thick the chops are, but 15 minutes at this high heat makes more sense. (Although straight from the refrigerator to the oven makes a difference as well.) Some commenters suggested adding 3 cloves of minced garlic or a bit of honey to the marinade; both of which I’ll try next time!/p>p>5 pork chops (hers were 1 inch thick, bone-in or boneless both work)/p>p>1/4 cup olive oil/p>p>2 Tbs. whole grain mustard or Dijon/p>p>1/4 cup balsamic vinegar/p>p>1 Tbs. fresh rosemary leaves coarsely chopped, or 1 tsp. dried/p>p>salt and pepper to taste/p>p>Whisk the olive oil, mustard, vinegar, rosemary, salt and pepper in a bowl until it begins to emulsify. Place the chops in a baking dish then pour the marinade over the chops and rub it all over them evenly, so they’re completely covered. Cover with plastic wrap and refrigerate for at least an hour to overnight. You could prepare these the night before and bake them when you come home from work the next day./p>p>Preheat the oven to 425 degrees F. Remove the plastic wrap from the baking dish and bake them for about 20 to 30 minutes (????) or until the internal temperature of the pork chops reaches 145 degrees. Let them rest at least 3 minutes to let the juices retreat back into the meat. This will insure maximum flavor and juicy pork chops. Just a quick sauté of zucchini and corn to keep their crunch and freshness, with garlic, olive oil butter and shallots adding to the glossy sauce. Feel free to add whatever else calls to you, like olives or capers. My modifications were to deglaze the pan with white wine after the garlic and shallot were softened, double the corn (which is so delicious in this sauce), and toss in a handful of grape tomatoes with the zucchini. A splash of lemon juice at the end brightens the dish I thought, along with a sprinkling of Parmesan. Leftovers made a wonderful lunch! (Deglaze with white wine here if you wish.) Add zucchini and cook, stirring occasionally, for about 4 minutes. Add corn along with remaining 2 Tbs. of olive oil and a pinch of salt; stir to coat. Cook until the corn is bright yellow and warm, about 2 minutes. Be careful not to overcook the vegetables, they should maintain their crispness./p>p>Add pasta to the pot with the vegetables, followed by the shrimp, 1/2 cup pasta water and remaining 2 Tbs. butter.
